Good Eatin'

I made homemade Chipotle this past weekend.... barbacoa, corn salsa, pico de gallo and lime/cilantro rice. YUUUUM.

Then I made some really good spinach lasagna rolls. This is almost a miracle because I hate spinach by itself (had a bad experience as a child) ... not too bad when it's mixed with a ton of ricotta and parm.

Keeping busy

Today I made four more wristlets for my mom, sisters and sis-in-law. Since I've already posted two pictures I won't bore you with more of them. It kept me busy while Tony worked on my car all afternoon. I keep telling him that we should just buy me a new car but he still isn't going for that one. I figure one day he'll crack. (hopefully)

Musical season is well on its way at work... Going in early every day (even Fridays when I don't teach) to get these kiddos ready.... I'm hoping it comes together for the show in 3 weeks.

I'm still looking for a new job -- a couple high school positions opened up in my district so I'm really hoping for the opportunity to interview for them! Praying away.

Speaking of... it's Easter weekend. I'm watching The Ten Commandments on TV while Tony is at work tonight. I love this movie... no matter how bad the acting is or how long it is, it's great.

OK, I'll stop now before I start rambling on about nothing. :)

Spring Break Fun!

Park City

We went down to Park City this weekend with the Pas' to see the David Mayfield Parade. I was pretty excited to see the incredibly talented Sarah Silva since it's been WAY too long since I've seen her. We decided that we would just rent out a condo since we got a great military discount and it turned out to be a really fun weekend trip. The condo was situated right at the base of a newer ski resort and the surroundings were really beautiful... especially when we woke up this morning to a decent amount of snow!

The concert was awesome - they were playing for some benefit so the crowd was pretty interesting, but all in all the show was SO entertaining. Sarah rocked it out, of course, and David was hysterical (and equally talented).
